Frittatas are my breakfast jam. I make a batch every weekend and throughout the week I can just heat up a serving in a flash. I used to make them in muffin form, because I was always on the go and would eat them cold, in the car, in between appointments. Lately however, I’ve found it easier to pour the ingredients into one giant pan and cut it into servings.
My go to frittata recipe has always been ground turkey and kale. But sometimes, you just have to mix things up a little bit. This is a great recipe that has helped me avoid boredom with my breakfasts. I serve it with half a sliced avocado, and covered in hot sauce.
3 cups eggs/egg whites (I use one carton of egg whites about 5-6 whole eggs)
1.5lb chicken, cut in small cubes
2-3 cups assorted bell peppers, cut into small sticks
2 tbsp hot sauce
1 tsp Mrs. Dash fiesta lime seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp chili powder
Preheat your oven to 375 degrees. Coat your dish with cooking spray or oil.
Cook chicken in a frying pan over medium heat until cooked through, then add your bell peppers. Continue to cook for another 4-5 minutes, until peppers are tender.
Meanwhile, mix the seasonings into your eggs thoroughly. I use a hand mixer, its a piece of cake!
Spread the chicken and pepper mixture into your pan evenly. Then pour your egg mixture over top. Pop it in the oven and cook for 1 hour.
Allow the frittata to cool for 5-10 minutes before cutting into servings.
