Ground Turkey and Kale Frittata

This recipe is easy to make, and perfect for busy mornings!  I make a batch every weekend, and even eat these cold while I’m driving.  It only takes a minute to pop them into the microwave though.  No more excuses for missing breakfast!


2-3 cups chopped kale

1lb lean ground turkey

3 cups liquid egg whites *

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp chipoltle or cayenne pepper (optional)

½ tsp black pepper

*You can also use a dozen whole eggs for this recipe.  Yolks are incredibly nutritious!  However, to cut back on calories, use egg whites.


Preheat oven to 375 degrees. Heat a skillet on the stove and cook ground turkey until browned and cooked through. Add the chopped kale and reduce heat. Cover with a lid and allow to simmer for 3-4 minutes. Remove from heat, and allow to cool for a few minutes.

Meanwhile, whisk the spices into your egg whites in very large bowl. Add your turkey and kale mixture to the eggs, stir, and pour into a sprayed muffin pan or baking dish. Bake for 30 minutes for a muffin pan, or about 1 hour for a single pan.
